Tell us about your Signature Cocktail & Why you designed it?

The cocktail is a whiskey and spice twist on the 'breeze school' of vodka and fresh juice cocktails i.e. Bay Breeze and Sea Breezes. I wanted to create a cocktail that celebrated the freshness and vibrancy of the whiskey and to make the spirit more accessible to guests not usually fond of or familiar with whiskey. The deconstruction element of the cocktail is intended to provide the drinker with a molecular play of individual aspects of the cocktail to be taken as fancied in relationship to the cocktail proper

Who do you envisage Drinking your Signature Cocktail?

Anybody with thirty dollars and an inquisitive mind.

How long have you been in the bar industry?

Ten years and counting.

What do you have that makes you Untouchable?

Great palate and a world class right hook.

What is your best advice for younger players?

Look at the past to create the future.

If you could pick any Glenfiddich variant to take with you on the plane to Scotland if you win, which one would it be?
