Tell us about your Signature Cocktail & Why you designed it?

My purpose behind this cocktail was to show the versatility and strength of the 18yo scotch, while creating classic flavours that the everyday person could understand and relate to. I tasted the 18yo one evening and the first image that came to me was that of savory fruits similar to that found on a cheese plate. So that was my aim, to blend the pear and apple fruit flavours so prevalent in the Glenfiddich 18yo with other fruit flavours present on a cheese plate. I captured the essence of a cheese plate by stewing quince in a prepared mulled wine syrup, which really gives the cocktail amazing complexity and depth, this coupled with a small amount of a rich sherry giving the drink a hint of muscatels.

Who do you envisage Drinking your Signature Cocktail?

I see customers ordering this drink towards the end of an evening when they need a drink with something more to offer than just a glass of wine or port.

What do you have that makes you Untouchable?

A love of scotch that is never satisfied and never will be.

What is your best advice for younger players?

Persistence is the key. do the hard yards and learn everything.
