I wanted to showcase the rich caramel and buttery characteristics of the Glenfiddich 15 year old Solera Reserve and complement them with the sweet winter fruits that I find really shine through this complex whisky

Build:
60mls Glenfiddich 15 year Old Solera Reserve
15mls Burnt Butter syrup
1 level bar spoon of Traditional Orange Marmalade
3 dashes of Peychaud's Bitters
5mls La Fee Parisian Absinthe
2 Orange zests flamed in La Fee Bohemian Absinthe
Method:
To start off with I will take the zest of an orange and ignite it with La Fee Bohemian Absinthe and cook until the outside edges are slightly charred
Meanwhile:
In an old fashioned glass
Rinse with La Fee Parisian Absinthe and discard the excess, add burnt butter syrup, marmalade and 3 drops of Peychaud's bitters
Add 15mls of Glenfiddich 15 year Old Solera Reserve stir to dilute.
Add ice, stir add more ice and 30mls of Glenfiddich 15 stir add more ice and a final 15mls of Glenfiddich and stir with a few more cubes of ice.
Finally gently rub the glass with one burnt orange zest and place the second one in the drink.
Now it is ready to be served.
