Glenfiddich 18 yo Ancient Reserve

Reason:

I was after a heavy yet refined single malt for my drink, I need a malt that has a long finish to complement the wood, citrus, spice, mocha and tobacco notes that are in The Vice and it was an easy choice in the end going with the Glenfiddich 18yr which offers all these tasty expressions.

The Vice

Build:

60ml Glenfiddich 18yr
30ml spice & tobacco syrup*
10ml cherry herring

*spice & tobacco syrup

2 cinnamon sticks
8 coffee beans
1 star anise
1 clove
1 small latte glass of water
1/4 small latte glass of caster sugar
1 scraped vanilla pod

In a saucepan muddle first four ingredients, add remaining ingredients. Cook on low heat for 30 minutes, stirring regularly. Let cool for a few minutes then place in a store and pour container adding a Dunhill cigar (tear or cut in half). Allow cigar to infuse at room temperature for 4 days.

Garnish

Grated dark chocolate and grated or muddled coffee beans on the side served on a porcelain spoon, clotted cream with a sprinkle of clove and caster sugar*

Mortar and pestle 1 part clove to 3 parts caster sugar

Method:

place all ingredients in a shaker filled with ice, place in an ice chest and stir 6 times. Double strain into long champagne flute.

Cut an orange in half, smear the orange evenly onto the outside of the glass. Sprinkle an even and light spread of the grounded coffee and dark chocolate around the whole glass.

Squeeze and place a large orange zest into the drink
Serve clotted cream, sprinkled with clove sugar on the side

The Vice is a complex drink combining all the delicious vices we consume but shouldn't, ie. alcohol, coffee, chocolate and tobacco. All four of these flavour profiles should be present in the drink. Commencing with the coffee and chocolate rim, followed by the warmness of the Glenfiddich 18yr, bounded by the sweetness and spiciness of the syrup and cherry liqueur. At the back end of the palate there is a lingering smokiness, or a tingling of the palate which is tobacco which completes this wonderful harmony.

But wait, there is more. To finish off the vice, there is one last piece of decadence with a dollop of clotted cream with a sprinkling of clove sugar which is acts as a palate cleanser for The Vice
