Reason:

Its young and vibrant taste and aroma profile make it the perfect single malt to create my signature serve. The 15 and 18 yr variants are already complex expressions of the 12yr by the master distiller and so I feel there is less creative input from a mixology perspective.

Build:

50 ml Glenfiddich 12 year Old Special Reserve
15 ml Quince liquor (Gabriel Boudier Coings)
1/3 zest of a lemon
2 drops wormwood essence (available at health food stores)
Sprig of fresh Thyme

Method:

Place a pinch of rubbed Thyme in a Boston and add other ingredients. Fill with ice. Stir and strain into a chilled coupette . Garnish with a sprig of thyme.

Explanation:

I have chosen these ingredients because when I smell and taste the 12 year old in a whisky snifter I get quince, citrus, subtle pine and wood aromas and flavours. The lemon zest enhances the citrus characteristic without making the drink sour. The Quince works great with the fruit characteristics and the wormwood works with the subtle woody characters while balancing out the drink and creating a full mouth feel and finish. The Thyme enhances the pine aromas while bringing all the flavours together and creating a lifted palette sensation.
