Reason:

I find Glenfiddich to have a slightly sweeter palate, with young characteristics and a nice dry finish. The flavours are fresh and clean making it very accessible to the uninitiated. Because of its weight in the front palate I find it amazing to create drier styled cocktails, as the spirit has enough weight to cope without the need for additional sweetners and its viscosity copes well with shaking.

Bel de Roy Cocktail

Build:

45ml Glenfiddich 12yo Reserve
15ml Dubonnet Rouge
1/8 Granny Smith Apple
1/2 Dash Peychaud Bitters (not a full splash but more than just drops)
1 Pernod rinsed chilled Whisky glass

Method:

Fill a Whisky glass with crushed ice and add to that a healthy dash of Pernod, Leave to dilute, chill and coat that glass. In a separate Boston Glass muddle the apple then add remaining ingredients and ice, shake. Empty whisky glass of ice and Pernod, then double strain the shaken mixture into the Pernod-rinsed, chilled Whisky glass. No garnish.

This drink has been made primarily as a palate cleanser, something to have in between drinks to freshen and restart the tastebuds. Or alternatively as something to have as an introduction to Single Malt Scotch Whisky. Glenfiddich 12yo presents clean young flavours of pear, quince, apple and grass with a thick front palate and a light dryness that carries through to the back, Granny Smith Apple adds a fluffy texture when shaken and a slight acid to the back-sides of the tongue, balancing out the front and mid-palate softness of the Scotch, a little Peychaud's ensures the flavours carry through to a clean finish while the addition of Dubonnet Rouge offers a subtle cherry flavour that accompanies the young fruits of Glenfiddich 12yo while fortifying the mid-palate with a dry sweetness. The aromatics of the Pernod rinsed glass replace the inconvenience of a lavish garnish and contribute the slightest anise dryness in the finish. The flavours are simple and as a result the Glenfiddich is allowed to spread itself across the palate evenly and persistently, providing an exceptionally clean and refreshing palate cleanser in the form of an unlikely Scotch cocktail.
